Soup! SOOOOOUP!

What did you do this weekend?

I did a service project with my nerd and the older two of our kids. We helped our church clear out brush, trees, and waist high grass in an abandoned cemetery. Some of the graves were from the 1800's, and many were unmarked. There were a lot of headstones for children, too, the youngest being a baby that only lived 5 days.

So sad. But so fulfilling at the same time. My kids blew me away. They worked like dogs, and never once complained. Not once! I haven't been that impressed with my kids in a while. What an awesome pair.

After the service project, I treated my family to some homemade cheddar broccoli soup. Nothing rings in fall like the reappearance of my cheddar broccoli soup.



It was AH-maze-ING.

And ridiculously easy. No really. I can't cook well, and I can make this stuff well.  Here is the recipe:

1 head broccoli, chopped
2 cans Lipton cheddar cheese soup
1 small brick Velveeta
4 cups water
2 cans cream-o-celery soup
1 can cream-o-mushroom soup

Boil broccoli in the water for 5 minutes. Add the soups, stir well. Then add Velveeta and stir until it is all melted and gooey. Keep warm until its time to serve, then dip some righteous bread in it.

**warning: this soup can make a person so happy and relaxed and warm-fuzzied out, that they pee their pants. It's been known to happen. And so ye are warned.**

This is a picture of me with the Velveeta. Usually, I prefer a more refined cheese from a specialty shop or deli cooler. However, there is a time and place for all cheeses. In my opinion, fans, "No cheese left behind."

And yes. My shirt does say, "Your mom goes to college" with a picture of Kip on it. What of it? That's how I roll.


Remember that. It will serve you well.

Try making the soup. I guarantee that you will love it, and send me an email saying, "Oh em gee, Brooke, thanks for that recipe!" You just wait....

Cheesus saves. Especially in soup form. Mmmm...soooooooup.
